Mizner and CMAA Zoom Training FSU Students on Wine Service

 

DELRAY BEACH FL, July 6, 2020 – Marc-Etienne Hoffmann, Mizner Country Club’s Food & Beverage Manager and Sommelier, told students from FSU who are part of the Club Management Association of America’s (CMAA) internship program that “wine service is nothing but a way to channel your passion.”

Teaching CMAA’s online course, Wine Service 101 last Monday, June 29, 2020, one of Hoffmann’s key take-aways was to install the philosophy that, “Nobody is taking this class to get into the business of order taking. We are in the business of creating an experience.”

Usually, the CMAA places students in country clubs as summer interns to gather needed credits to graduate. Given the present COVID-19 situation, CMAA decided to offer students, online classes, instead.

Among the topics covered during the 60-minute on-line class were:

  • Sparkling wine basics – categories, storing, presentation & service
  • White wine basics – categories, storing, presentation & service
  • Red basics — categories, storing, presentation & service
  • Food pairing basics
  • Decanting basics
  • Digestive basics — sherry/port/dessert wine

 

“I was very excited to have the opportunity to provide the tools for future leaders to gather together and take their first steps in becoming part of this exciting industry.  When it comes to wine, I have two golden rules:  First, like what you drink, and second share it with others whether it is as a sommelier, bartender, teacher, chef, or chemist. Know your product and all its ingredients to create the perfect experience,” Hoffmann coached.

Noting his own career experience, Hoffmann said, “I consider myself very fortunate that I had the opportunity to have worked and to work with great leaders who taught me so much. Learning new things is one of the great gifts in life that never stops. I am always looking forward to sharing what I’ve learned with others.”

Larry Savvides, Mizner Country Club’s General Manager and Chief Operating Officer, shared, “We are extremely fortunate to have Marc’s talents and expertise contributing to our food & beverage operations.  His knowledge and enthusiasm have helped create an all-encompassing sensory experience for our club members.  I know that the students who attended his course will walk away with the knowledge that they will carry with them throughout their careers.”
